  • 8 large tomatoes
  • 1/4 cup brown sugar or raw cane sugar
  • 2 TBS garam masala
  • 1 TBS herb or sea salt
  • olive oil spray

Heat the oven to 200. Cut the tomatoes crosswise to yeild 3 thick slices each. Place the slices on parchment paper lined baking sheets. In a small bowl, mix the sugar, garam masala, and salt. Sprinkle this mixture on the tomato slices and spray them with oil. Bake the tomatoes for about 8 hours or overnight until they are caramelized and collapsed. They may be used warm or at room temperature, stored for 4-5 days in the fridge, or frozen.
