  • 10 lbs sweet potatoes
  • 4 lbs white potatoes
  • 4-5 lbs onions
  • 1 doz eggs
  • chives
  • flour
  • baking powder
  • salt and pepper
  1. Shred sweet potatoes, potatoes, and onions in a food processor. Drain all of the liquid.
  2. Mix with the eggs, flour, baking powder, chives, salt, and pepper.
  3. Heat peanut oil to 375 in deep fryer.
  4. Make thin patties and place in the oil. Set timer to 7 minutes. Halfway through, turn the latkes over. Remove from the oil when the timer dings. Drain on paper towels before serving with apple sauce or sour cream. Also delicious plain!
