- 10 lbs sweet potatoes
- 4 lbs white potatoes
- 4-5 lbs onions
- 1 doz eggs
- chives
- flour
- baking powder
- salt and pepper
- Shred sweet potatoes, potatoes, and onions in a food processor. Drain all of the liquid.
- Mix with the eggs, flour, baking powder, chives, salt, and pepper.
- Heat peanut oil to 375 in deep fryer.
- Make thin patties and place in the oil. Set timer to 7 minutes. Halfway through, turn the latkes over. Remove from the oil when the timer dings. Drain on paper towels before serving with apple sauce or sour cream. Also delicious plain!
