- 2 Large Sweet Potatoes, peeled and cut into chunks
- 2 Large Apples (Gala, Fuji, or other sweet cooking apples), peeled, cored and cut into chunks
- 2 Tbsp Butter, melted
- 3 Tbsp Maple Syrup
- 1/2 Tsp Salt
- 1/2 Tsp Cinnamon
- 1/4 Tsp Nutmeg
- 1 Cup Apple Juice
Preheat oven to 375 degrees. Combine all the ingredients in a bowl and stir. Place the sweet potato/apple mixture in a buttered 13 x 9 inch baking dish. Cover with foil and bake for 30 minutes. Uncover, stir and bake an additional 20-30 minutes or until tender. Serve.
