Ingredients

  • 2 large sweet potatoes
  • 3 Tbs extra-virgin olive oil, plus more for the pan
  • 1 tsp mild curry powder
  • salt
  • 1 Tbs unsalted butter
  • 1 Tbs fresh lemon juice, or to taste

Technique

  1. Preheat the oven to 375. Peel the sweet potatoes and cut into 1-inch cubes. Put the cubes into a large bowl and coat with the oil. Add the curry powder and salt to taste. Place in a greased baking pan, cover with aluminum foil, and bake for 50 minutes or until softened. Remove the foil and bake an additional 10 minutes, or until lightly browned on top.
  2. Remove the sweet potatoes from the oven and transfer to a food processor. Add the butter and lemon juice and process until smooth.
