Ingredients
- 2 large sweet potatoes
- 3 Tbs extra-virgin olive oil, plus more for the pan
- 1 tsp mild curry powder
- salt
- 1 Tbs unsalted butter
- 1 Tbs fresh lemon juice, or to taste
Technique
- Preheat the oven to 375. Peel the sweet potatoes and cut into 1-inch cubes. Put the cubes into a large bowl and coat with the oil. Add the curry powder and salt to taste. Place in a greased baking pan, cover with aluminum foil, and bake for 50 minutes or until softened. Remove the foil and bake an additional 10 minutes, or until lightly browned on top.
- Remove the sweet potatoes from the oven and transfer to a food processor. Add the butter and lemon juice and process until smooth.
