These potato chunks cook two ways: baking in the oven, and frying in the oil in the pan. The result is crunchy and chewy and delicious.

Ingredients

  • 5 lbs of yellow potatoes
  • olive oil
  • chopped garlic
  • onions
  • ground or rubbed sage
  • salt and pepper to taste

Technique

  1. Preheat the oven to 375. Take a large roasting pan or two small ones and line with several layers of foil. Your cleanup crew will thank you for this.
  2. Wash the potatoes and dice them. Slice the onions, and add to the pan along with the potatoes and garlic.
  3. Drizzle generously with the olive oil, making sure there's enough oil to cover the bottom of the pan, and add the salt, pepper, and sage. Stir to mix, being careful not to rip the foil.
  4. Roast for an hour, stir and detach the bottom bits (careful with the foil!), and roast for another hour.
