- 8oz mixed fresh mushrooms (cremini, button, shiitake, oyster, chanterelle), sliced or cut into small pieces; discard tough stems
- 6 TBS fresh lime juice
- 1 medium-large ripe tomato, cored and cut into 1/4“ pieces (seeded optional)
- 1/2 small white onion, minced
- 1/4 bunch cilantro, chopped
- 1 fresh serrano chile, stemmed, seeded, and finely chopped
- 1 TBS olive oil
- salt
Marinate the mushrooms in the lime juice for 1 hour, stirring regularly. If you want to do this step several hours ahead, remove the mushroom from the lime juice after 1 hour of marinating and reserve, using at the end if wanted.
Add the rest of the ingredients and mix well. Refrigerate if not serving immediately, but preferably not more than an hour.
