1. make cauliflower rice (chop cauliflower, pulse in food processor, cover and microwave until done)
2. mix

• 1/2 c. lime +/- lemon juice
• 1/4 c. olive oil
• garlic
• salt
• 1 to 1.5 c. chopped cilantro

Blend with a stick blender if desired. (I did)

Stir the cilantro-lime into the rice in the desired ratio, and serve.
