Calabacitas
Ingredients:
- 2 yellow squash, thinly sliced - 2 zucchini, thinly sliced - 1 large onion, halved and thinly sliced - 1 clove garlic, crushed - 4 cups frozen corn - 1 cup canned tomatoes, drained and chopped - 1 can mild green chiles, drained and chopped - 8 oz grated cheddar - oil
Method:
- Saute onion in oil.
- Add squash, zucchini, garlic, salt. Stir for 5 minutes, cover for 5 minutes. - Add corn, stir for 2 minutes. - Turn up heat and stir to remove moisture. - Add tomato and chiles. Stir 2 minutes. - Turn off heat, top with cheese. When it melts, stir gently.
