Sauce for meat
Ingredients
- 1 cup cilantro leaves
- 8 cloves garlic
- 1/ cup vinegar
- juice of 1 lime
- 1/2 cup onion
- dash or two of red pepper flakes
- 2/3 cup olive oil
- salt and pepper to taste
- 1/2 cup chopped sweet red peppers (optional)
- 1/2 cup minced tomato (optional)
- 1/2 cup chopped fresh oregano (optional)
- Put cilantro, garlic, vinegar, lime juice, onion, and red pepper flakes in a blender. Using the chop setting, pulse until the liquid is thick. Do not overprocess!
- Pour the mixture into a large non-metallic bowl and whisk in the olive oil by hand. If you use the blender for this step, the liquids will emulsify and become an unattractive white paste.
- Add salt and pepper, plus more vinegar and lime juice as needed. The flavor should be very intense with garlic and cilantro, and should have enough salt.
- Take a piece of bread and test the chimichurri for the correct balance of seasoning.
- If you want to experiment, fold in the optional ingredients at the end.
