- 1 Large Zucchini (Courgette)
- 50gms (2 oz) English Spinach
- 4 Eggs
- 1 Tomato
- Small amount of diced Capsicum (Bell Pepper)
- Minced Garlic
- Grated Cheese to top
- Thinly slice the Zucchini lengthwise and line 4 large Muffin cups with slices
- Layer the Spinach leaves around the inside of the Zucchini (creating a well)
- Sprinkle capsicum and Garlic in bottom of well
- Break 1 egg into each cup
- Top with tomato slice
- Bake for 10 minutes then add cheese and bake for a further 5 - 10 minutes depending upon how firm you like your eggs.
