Saute onions, carrots, broccoli, cauliflower, and mushrooms until mostly cooked.
Add canned diced tomatoes with juice, or quartered grape tomatoes.
Open 1 or 2 jars of Trader Joe's Korma Simmer Sauce, and pour over veggies. Add about 1/2 cup water to the jars to rinse them out, and add that to the pan.
Simmer until the veggies are fully cooked, and serve with pita, nan, chapati, rice, whatever.
