  • 1 cup quinoa
  • 1 cup dried red lentils, rinsed and drained
  • 5 cups water or vegetable stock
  • 1 small yellow onion, chopped
  • 8 cloves garlic

Add to a medium pot and cook over medium-high heat until most of the liquid is absorbed, about 25 minutes, stirring occasionally. Add more liquid if needed.

  • 1/4 cup minced herbs such as cilantro, parsley, dill
  • soy sauce
  • salt and pepper

Add, stir and serve.

Variations:

  • Add 1 1/2 cup chopped veggies with the quinoa - celery, carrots, cabbage, zucchini, asparagus.
  • Add a squeeze of lime juice and a little toasted sesame oil when serving.
