- 1 cup quinoa
- 1 cup dried red lentils, rinsed and drained
- 5 cups water or vegetable stock
- 1 small yellow onion, chopped
- 8 cloves garlic
Add to a medium pot and cook over medium-high heat until most of the liquid is absorbed, about 25 minutes, stirring occasionally. Add more liquid if needed.
- 1/4 cup minced herbs such as cilantro, parsley, dill
- soy sauce
- salt and pepper
Add, stir and serve.
Variations:
- Add 1 1/2 cup chopped veggies with the quinoa - celery, carrots, cabbage, zucchini, asparagus.
- Add a squeeze of lime juice and a little toasted sesame oil when serving.
