recipes:main_dish:veggie:madras_lentils
  • cooking oil or ghee
  • 1/2 medium onion, diced small
  • chopped garlic
  • 1 cup whole lentils/dal, black or green
  • 2 cups water

Saute onions in the oil or ghee in the pressure cooker. Add the lentils and the water and set for 7 minutes at high pressure. (If doubling the recipe, use 4 cups of water for 2 cups of lentils and set for 10 minutes.) When it is done, add

  • 1 15-oz can of ground tomatoes
  • 2 cans kidney beans(Rajma), drained and rinsed
  • powdered ginger
  • ground fennel seeds
  • Red chili powder (according to taste)
  • ground cumin
  • Garam Masala
  • a slash of whole milk
  • chopped coriander leaves (optional)
  • Salt to taste

Stir together, adjust seasonings, and serve hot over rice.
