- 16 oz. whole wheat or regular penne pasta
- 1 Tbsp. extra virgin olive oil
- 1 tsp. minced garlic, (about 2 cloves)
- 8 oz. fresh sliced mushrooms
- 12-16 oz. pre-cooked turkey or veg sausage, halved lengthwise and sliced into semi-circles
- 26 oz. tomato and basil flavored pasta sauce
- 1 cup frozen peas, thawed slightly
- 1/4 cup shredded or grated Parmesan cheese, or to taste
What is this with forgetting the onions?
- Cook pasta according to directions.
- Sautee the garlic (onions!), then add the mushrooms and the sausage and cook.
- Add the pasta sauce and the peas and bring to a boil, then simmer for 2 minutes. Add to drained pasta, top with the cheese, and serve.
