- 2 Tbsp. extra virgin olive oil
- 1/2 yellow onion, diced
- 8-12 oz. sweet or hot Italian-style chicken sausage (or use meatless sausage or mushrooms), diced into 1/2-inch pieces
- 16 oz. linguine
- 2 large carrots, grated (or 1 1/2 cups pre-shredded carrots)
- 1 tsp. dried oregano
- 28 oz. whole tomatoes, with their liquid OR stewed tomatoes
- 1 Tbsp. sugar
- 1/4 cup grated Parmesan cheese, for serving (optional)
- Cook the pasta according to directions.
- Sautee onions and sausage. Add carrots and oregano and cook 4-5 minutes more until the carrots are tender. Add the tomatoes and optional sugar, and cook, breaking up the tomatoes if needed.
- Simmer until the pasta is done, then mix with the drained pasta and top with the parmesan.
Booster: spicy sausage, double the oregano, add crushed red pepper.
