Creamy Fettucine with Sausage, Olives and Spinach

Ingredients

  • olive oil
  • 1 lb Italian chicken sausage cut into 1/2 inch pieces
  • 4-6 garlic cloves, minced (2 tbsps)
  • 1/4 pound spinach, cleaned and coarsely chopped
  • salt and pepper
  • 1 lb fettucine
  • 1/2 cup pitted olives
  • 1/4 cup heavy cream
  • 1 tsp crushed red pepper flakes
  • 2 tsps chopped fresh oregano

Method

  1. cook pasta, drain
  2. brown sausage in oil
  3. add garlic and cook until beginning to brown.
  4. add spinach, saute 3-4 minutes
  5. add olives, saute 1 minute
  6. stir in cream
  7. add to pasta and toss
  8. add spices, salt and pepper to taste
