Creamy Fettucine with Sausage, Olives and Spinach
Ingredients
- olive oil
- 1 lb Italian chicken sausage cut into 1/2 inch pieces
- 4-6 garlic cloves, minced (2 tbsps)
- 1/4 pound spinach, cleaned and coarsely chopped
- salt and pepper
- 1 lb fettucine
- 1/2 cup pitted olives
- 1/4 cup heavy cream
- 1 tsp crushed red pepper flakes
- 2 tsps chopped fresh oregano
Method
- cook pasta, drain
- brown sausage in oil
- add garlic and cook until beginning to brown.
- add spinach, saute 3-4 minutes
- add olives, saute 1 minute
- stir in cream
- add to pasta and toss
- add spices, salt and pepper to taste
