  • ½ pounds Ground Lamb
  • 1 pound Ground Beef
  • ½ cups Chopped Onion
  • ½ cups Chopped Red Bell Pepper
  • 1 Tablespoon Dry Parsley (or 1/4 Cup Or More Chopped Fresh Parsley)
  • 2 whole Small Tomatoes, Chopped Fine With Their Juices
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Freshly Ground Black Pepper
  • ¼ cups Dry Red Wine
  1. Preheat grill or broiler.
  2. Mix all ingredients together and form into small patties approximately 2 inches in diameter and 1/2 inch thick.
  3. Grill or broil for approximately 5 minutes per side or to desired degree of doneness. Serve with fresh soft flatbread or pita, grilled onions, tomato slices, and tahini sauce.

For tahini sauce, mix prepared tahini with warm water and lemon juice until it reaches desired consistency. Mixture will thicken before it thins.

Alternate:

  • 1 lb lean ground beef
  • 1 lb ground lamb
  • 1 lg onion, diced small
  • 1 green bell pepper, diced small
  • 1 c fresh chopped parsley
  • 3 T tomato paste
  • 1/2 t allspice
  • 1 t black pepper
  • 2 t salt
  • 1/4 t cayenne pepper
  • 1/4 c flour
  • 1 T fresh lemon juice

Mix all of the ingredients together until well blended and form into oval patties (makes 8-10).

Grill or broil to preferred done-ness.
