Ingredients:
- - boneless leg of lamb, or lamb roast, or whatever. Chop it into 1“ cubes and reserve the fat.
- - onions, roughly chopped
- - garlic
- - crushed tomatoes
- - coconut milk
- - salt, pepper, chili pepper, turmeric, coriander, onion and garlic powder, and anything else you think might belong in curry.
Method:
- - Get a big pot. Put the lamb fat into the pot and heat it up.
- - Blend the tomatoes with the coconut milk; it could use some salt, chili pepper, turmeric, coriander, black pepper, onion and garlic powder.
- - Sautee the onions in the lamb fat until they get some color.
- - Use a slotted spoon to transfer onions into the blender with the sauce. Blend.
- - Brown the lamb cubes in the lamb fat. Add some salt, maybe other spices.
- - When the lamb has good color, add in the sauce from the blender. Simmer for a while before serving.
