Tenderloin Tips, Apples, Bread, Apple, Cider, Rosemary Prep Time: 45 minutes Serves: 2

  • 1 cup apple cider
  • 1t sugar
  • 1 green apple, chopped
  • 1t extra-virgin olive oil
  • 1 sprig rosemary
  • 1 lb filet tips
  • Salt and pepper to taste
  • 4 croutons baguette, cut thin on a bias
  1. Reduce apple cider with sugar (gastrique).
  2. Saute apples in extra-virgin olive oil then add rosemary.
  3. Season filet tips with salt and pepper, and grill.
  4. Sear then toast baguette.
