Tenderloin Tips, Apples, Bread, Apple, Cider, Rosemary Prep Time: 45 minutes Serves: 2
- 1 cup apple cider
- 1t sugar
- 1 green apple, chopped
- 1t extra-virgin olive oil
- 1 sprig rosemary
- 1 lb filet tips
- Salt and pepper to taste
- 4 croutons baguette, cut thin on a bias
- Reduce apple cider with sugar (gastrique).
- Saute apples in extra-virgin olive oil then add rosemary.
- Season filet tips with salt and pepper, and grill.
- Sear then toast baguette.
