Not-the-Lunch-Lady’s Sloppy Joe’s
Prep Time: 10 Minutes Cook Rime: 15 Minutes Yield: 4 Servings
1 tbsp. olive oil 1 ¼ lbs. lean ground beef or turkey 2 tbsp. brown sugar 1 tbsp. Montreal Steak seasoning 1 medium onion, chopped 1 small red pepper, chopped 1 small green pepper, chopped 4 cloves garlic, minced 1 tbsp. red wine vinager 1 tbsp. Worcestershire sauce 2 cups tomato sauce 2 tbsp. tomato paste salt & freshly ground pepper, to taste 4 crusty rolls (or burger buns) split and lightly toasted
Heat oil in a large skillet over medium high heat. Add meat and brown leaving slightly chunky versus very finely broken down. Add sugar and seasoning and stir to combine. When the meat has browned, reduce the heat to medium and add the onion, peppers, garlic, vinegar & Worcestershire – stir and cook for about 5 minutes. Add the tomato sauce & paste stirring to combine. Season with salt & pepper. Cover and reduce heat to low & simmer for 5-7 minutes. Remove from heat and spoon over toasted buns. May be served sandwich style or open-face.
