  • 3-5 lb roast (eye round or other roast cut - remember, cheap cuts of meat are fine in the slow cooker because the long cooking time makes them tender, and any roast cut will do even if it says 'oven' on it)
  • 1 28 oz can stewed, diced or crushed tomatoes with liquid
  • 3 stalks celery, diced

Place in slow cooker. Mix together:

  • 1 1/2 c. V8 or tomato juice
  • 1/2 c. balsamic vinegar
  • 1/4 c. sugar
  • 2 T mustard powder (you can substitute a nice ground prepared mustard)
  • 1 T chipolte chili powder or 2 T hot sauce (or to taste)
  • glug of soy sauce
  • 1 capful tarragon
  • celery salt & pepper to taste
