Albanian Stuffed Eggplant
Ingredients:
- eggplants
- onion
- garlic
- tomato sauce
- ground beef
- salt, olive oil
Method:
- Make eggplant boats with flat bottoms. Race in salt water for 30 minutes.
- Set oven to 375F.
- Put eggplants in baking dish. Sprinkle with olive oil. Bake 20 minutes; softened but not cooked through.
- In a large skillet, saute onion and garlic in oil until soft.
- Add ground beef and stir until brown.
- Add tomato sauce, salt, pepper, a little chopped parsley. Cook until starts to thicken.
- Fill eggplants.
- Cover eggplants tightly with foil. Bake 30-40 minutes. Consider toppings.
