You will never miss potatoes with this idea. Cook a head of cauliflower until very soft, mash like potatoes and add onions, bacon bits, sour cream, cheese,chives or what ever you like in your twice baked potatoes, put in a sprayed casserole and bake until lightly browned. yummm! I took this to a get together and no one knew it wasn't potatoes.
