- 1 quart Silk creamer or vanilla soy milk
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp almond extract
- 2 TBS arrowroot powder
- 4 TBS cold water
- Heat the soy creamer in a pot over medium heat. When it approaches boiling, lower to a simmer and whisk in all of the ingredients except the arrowroot powder and the water.
- Whisk the arrowroot powder and water together in a small bowl and add to the pot. (If you want thinner nog, reduce to 1 TBS arrowroot powder to 2 TBS water.)
- Whisk until the liquid thickens, about 5 minutes. Pour into glasses and serve with a sprinkle of cinnamon on top.
