Makes 12-18 cookies

  • 1 stick unsalted butter, softened
  • ½ cup sugar
  • ⅓ cup light brown sugar
  • 1 large egg
  • 1 cup flour
  • ¾ teaspoon kosher salt
  • ¼ teaspoon baking powder
  • ⅛ teaspoon baking soda
  • 1 recipe Pie Crumb, follows
  • ¾ cup dried cherries
  • 1 large egg white
  • ¼ cup sugar
  1. Heat the oven to 350°F. Spray two baking sheets.
  2. In a large bowl, mix together butter and sugars until combined and smooth. Add egg and continue mixing. Add the flour, salt, baking powder and baking soda and stir just until combined. Stir in pie crumbs and cherries until well distributed.
  3. Scoop dough into ⅓ cup-sized balls and place 2 to 3 inches apart onto your sprayed sheets. Flatten the mounded cookie dough tops with the palm of your hand. Brush each flattened top with egg white, then sprinkle a generous amount of sugar on top. Bake the cookies for 8 to 10 minutes, until the edges of the cookies are golden brown and the top a glossy sugar crystal surface.
  4. Cool completely then dig in.

Bake Club Pie Crumb

Makes enough for 1 recipe Cherry Pie Cookies

  • ¾ cup flour
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt
  • 4 tablespoons butter, melted
  • 2 teaspoons oil
  1. Heat the oven to 350°F. Spray one baking sheet.
  2. In a small bowl, stir together flour, sugar and salt. Add in butter and oil and stir until the mixture forms small clusters. Spread these clusters across the baking sheet and bake for 25 minutes, breaking them up occasionally with a spoon or spatula so they evenly develop a deep golden brown color. Cool completely before using.
