Ingredients
- 1/3 cup refried beans
- 1 Tbs olive oil
- 1 egg
- 1 frozen waffle
- 2 thin slices of Meunster cheese
- 2 thin slices of turkey ham
- butter (for cooking the egg)
- maple syrup for drizzling
- salt and pepper to taste
- 1 Tbs chopped fresh flat-leaf parsley
Technique
- In a small bowl, combine the refried beans with the olive oil, adding a little water to thin to a spreadable consistency if needed. Mix well and season with salt and pepper to taste.
- In a small skillet, melt the butter and cook the egg to the desired doneness.
- While frying the egg, toast the waffle. Spread with a little butter and top with the refried beans, spreading the beans all the way to the edges to cover the waffle so it doesn't burn.
- Drizzle with the maple syrup and top with the cheese. Broil or toast until the cheese melts, watching carefully to make sure it doesn't burn.
- Top the waffle with the turkey ham and the fried egg, then top with the chopped parsley.
