Ingredients

  • 1/3 cup refried beans
  • 1 Tbs olive oil
  • 1 egg
  • 1 frozen waffle
  • 2 thin slices of Meunster cheese
  • 2 thin slices of turkey ham
  • butter (for cooking the egg)
  • maple syrup for drizzling
  • salt and pepper to taste
  • 1 Tbs chopped fresh flat-leaf parsley

Technique

  1. In a small bowl, combine the refried beans with the olive oil, adding a little water to thin to a spreadable consistency if needed. Mix well and season with salt and pepper to taste.
  2. In a small skillet, melt the butter and cook the egg to the desired doneness.
  3. While frying the egg, toast the waffle. Spread with a little butter and top with the refried beans, spreading the beans all the way to the edges to cover the waffle so it doesn't burn.
  4. Drizzle with the maple syrup and top with the cheese. Broil or toast until the cheese melts, watching carefully to make sure it doesn't burn.
  5. Top the waffle with the turkey ham and the fried egg, then top with the chopped parsley.
