- 5 cucumbers, seeds removed
- 1 avocado
- juice of 1-2 lemons
- 1 bunch mint
- 3 Tbs plain yogurt (optional)
- salt and pepper to taste
In blender, combine 4 roughly chopped cucumbers, lemon juice, and salt and pepper. Blend well. Dice remaining cucumber and mint; add yogurt if desired. Pour soup into small bowls or cups and top with the cucumber mint mix, adjust salt and pepper.
