  • chopped carrot
  • chopped celery
  • chopped onion
  • diced potatoes
  • 1 tablespoon oil
  • 4 cups beef broth
  • 4 cups water
  • 2 cups chopped cooked roast beef OR 1.5 lbs stew beef cut into small cubes
  • 1 cup pearl barley
  • salt & pepper to taste
  • 1/2 cup chopped fresh Italian parsley
  • garlic powder
  • 1 teaspoon dried thyme
  1. Brown the beef in the oil, and season with salt, pepper, & garlic powder. Put beef into the crockpot and brown the onions in the beef pan. Deglaze the pan with beef broth.
  2. Put everything into the crockpot. Cover and cook on low for 7-8 hours.
