- chopped carrot
- chopped celery
- chopped onion
- diced potatoes
- 1 tablespoon oil
- 4 cups beef broth
- 4 cups water
- 2 cups chopped cooked roast beef OR 1.5 lbs stew beef cut into small cubes
- 1 cup pearl barley
- salt & pepper to taste
- 1/2 cup chopped fresh Italian parsley
- garlic powder
- 1 teaspoon dried thyme
- Brown the beef in the oil, and season with salt, pepper, & garlic powder. Put beef into the crockpot and brown the onions in the beef pan. Deglaze the pan with beef broth.
- Put everything into the crockpot. Cover and cook on low for 7-8 hours.
