All measurements approximate

• 1 large or two small roasted beets, peeled
• 4 T walnuts (try toasting them next time)
• 1 slice robust white bread or 1 small boiled potato
• 6 T olive oil
• 1 garlic clove
• 2 T red wine vinegar (try champagne next time)
• salt to taste (~1/2 t)

Zoom in blender or food processor until spoonable with a pita chip or something similar. Nom enthusiastically.
