makes 3 cups
- 11 TBS sugar
- 3 cups water
- 7 tsp salt
- 5 TBS vinegar
- 3 tsp garlic, minced
- 4 tsp mushroom soy
- Heat 4 TBS sugar with 2 tsp water over high heat until boiling. Cook without stirring until it caramelizes, 3-4 minutes. Add remaining water, sugar, and salt; stir to dissolve. Cool.
- Add vinegar and garlic. (note no mushroom soy - see alternate version)
Alternate method:
- boil water, sugar, and salt until dissolved. Cool. Add all remaining ingredients.
