Make thin strips from 1 lb zucchini. Whisk 4 Tbs chopped cilantro, 5 Tbs EVOO, 3 Tbs lime juice, 1 tsp salt, and 1/4 tsp pepper; add 1 diced avocado, zucchini, and 1 red bell pepper cut into thin strips to the dressing, toss, adjust seasoning, and serve.
