Ingredients
- 1 whole chicken breast or 2 half breasts
- 1/2 head napa cabbage
- 3 large carrots
- 6 scallions
- salt and pepper
dressing:
- 1/4 cup rice wine vinegar
- 1/3 cup olive oil
- 2 tsp sesame oil
- 2 Tbs Thai peanut sauce
- 2 Tbs sugar
- 1 Tbs sesame seeds, regular or black
Technique
- Cook the chicken: poach, grill, roast, etc, then cool and shred.
- Thinly slice the cabbage, grate the carrots, and thinly slice the scallions.
- Whisk together all of the dressing ingredients and toss with the chicken, cabbage, and scallions.
