Ingredients

  • 1 whole chicken breast or 2 half breasts
  • 1/2 head napa cabbage
  • 3 large carrots
  • 6 scallions
  • salt and pepper

dressing:

  • 1/4 cup rice wine vinegar
  • 1/3 cup olive oil
  • 2 tsp sesame oil
  • 2 Tbs Thai peanut sauce
  • 2 Tbs sugar
  • 1 Tbs sesame seeds, regular or black

Technique

  1. Cook the chicken: poach, grill, roast, etc, then cool and shred.
  2. Thinly slice the cabbage, grate the carrots, and thinly slice the scallions.
  3. Whisk together all of the dressing ingredients and toss with the chicken, cabbage, and scallions.
