  1. First, start by finely dicing 4-5 Persian cucumbers. Add into a bowl.
  2. To the cucumbers, add about half a quart of fresh organic strawberries. You can slice these, or make them smaller, but I like bigger chunks of berries.
  3. Add 1 avocado cut into cubes, 1/3 to 1/4 cup of toasted pecans (make sure these are toasted and cooled, getting them toasted brings out the flavors), 1/4 cup to 1/3 cup of fresh Thai basil or mint finely chopped.
  4. To dress it, I squeezed half to 1 large lemon, added about 1/4cup to 1/3 cup of GOOD olive oil, a couple pinches sea salt, about a tablespoon of chile lime seasoning (I get mine at Trader Joe’s), 1 tablespoon of sesame seeds (optional), and crumbled about 3-4oz of fresh feta from the brine.
  5. Give your salad a really good toss to make sure everything is mixed in well. Taste, then adjust as you’d like. You may want to make it less/more lemony, more salty, or whatever.

This is one salad where you can adjust the ratio of your ingredients to whatever your preference. The one recommendation is to use organic berries if you can, as they are not only better for you, but the berries just taste sweeter in this recipe.
