Red Cabbage & Apple Slaw Prep Time: one hour Serves: 4-5
Ingredients
Vinaigrette:
- 1 minced shallot
- 1/2t Dijon
- 1t sea salt
- 1t horseradish
- 1/4 to 1/2 cup cider vinegar
- 1 to 2t sugar
- 1 orange, zested on microplane
Cabbage-Apple Slaw:
- 1/2 head red cabbage, shaved
- 2 granny smith apples, julienned
- 2 carrots, julienned
- 1 small red onion, shaved
- 1 bunch scallions, sliced into thin rings
- 1/2 bunch cilantro, chiffonade
- 1 to 2t mayonnaise
- Salt to taste
Technique
Vinaigrette:<br> In large bowl, mix together ingredients and let sit for 20 minutes.
Cabbage-Apple Slaw:<br> Place cabbage into vinaigrette and let sit for 20 more minutes. Then add remaining ingredients except mayonnaise and salt; mix together. Add mayonnaise and season with salt.
