Red Cabbage & Apple Slaw Prep Time: one hour Serves: 4-5

Ingredients

Vinaigrette:

  • 1 minced shallot
  • 1/2t Dijon
  • 1t sea salt
  • 1t horseradish
  • 1/4 to 1/2 cup cider vinegar
  • 1 to 2t sugar
  • 1 orange, zested on microplane

Cabbage-Apple Slaw:

  • 1/2 head red cabbage, shaved
  • 2 granny smith apples, julienned
  • 2 carrots, julienned
  • 1 small red onion, shaved
  • 1 bunch scallions, sliced into thin rings
  • 1/2 bunch cilantro, chiffonade
  • 1 to 2t mayonnaise
  • Salt to taste

Technique

Vinaigrette:<br> In large bowl, mix together ingredients and let sit for 20 minutes.

Cabbage-Apple Slaw:<br> Place cabbage into vinaigrette and let sit for 20 more minutes. Then add remaining ingredients except mayonnaise and salt; mix together. Add mayonnaise and season with salt.
