- 1 ripe mango diced
- 1 cup of frozen corn
- 1 medium tomato diced
- 1 cup black beans (can or cooked)
- zest and juice of 1 lime and 1 orange
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 4 green onions sliced - white only (or 1 small red onion diced)
- 1 green pepper diced
- 1 teaspoon cumin
- 1 1/2 teaspoon salt
- 1 tablespoon Mrs Dash Fiesta Lime (my 1 cheat for this recipe! If you like spicy foods add 1/2 teaspoon cayenne).
Mix all together and refridgerate for at least 2 hours to let the flavors mix. Mix and taste prior to serving and adjust seasonings as needed. I serve it cold with warm rice or as a side to grilled chicken or sword fish.
