- 1/4 c sesame seeds
- 4 cups seeded and sliced cucumber, 1/8“ thick (~2 lg cukes)
- 2 TBS thinly sliced green onions
- 1 TBS minced red onion
- 1 sheet nori, zested or finely grated
- 1/2 tsp sea salt
- 2 TBS brown rice vinegar
- Toast the sesame seeds in a pan or in the oven.
- Combine all ingredients, mix well and serve.
