Pad Thai
Ingredients
- chicken thighs
- firm tofu
- shirataki noodles
- bean sprouts
- eggs
- sweetener of choice
- onion
- garlic
- scallions/green onions
- ginger paste
- fish sauce
- lime juice
- mushroom soy
- oil
Method
- Sauce: whisk together sweet, sour, fish and soy.
- Noodles: rinse and drain; shirataki noodles don't need to cook
- Tofu: in a hot oiled pan, crisp slices of drained tofu until nearly crunchy
- Chicken: stir-fry small cubes of chicken in very hot oil, along with the ginger, garlic and roughly chopped onion and scallion whites.
- Eggs: scramble in the pan, not too hard.
- Assemble: noodles, sprouts, tofu, chicken, eggs, sauce, finely sliced scallion greens, crushed peanuts.
