Pad Thai

Ingredients

  • chicken thighs
  • firm tofu
  • shirataki noodles
  • bean sprouts
  • eggs
  • sweetener of choice
  • onion
  • garlic
  • scallions/green onions
  • ginger paste
  • fish sauce
  • lime juice
  • mushroom soy
  • oil

Method

  1. Sauce: whisk together sweet, sour, fish and soy.
  2. Noodles: rinse and drain; shirataki noodles don't need to cook
  3. Tofu: in a hot oiled pan, crisp slices of drained tofu until nearly crunchy
  4. Chicken: stir-fry small cubes of chicken in very hot oil, along with the ginger, garlic and roughly chopped onion and scallion whites.
  5. Eggs: scramble in the pan, not too hard.
  6. Assemble: noodles, sprouts, tofu, chicken, eggs, sauce, finely sliced scallion greens, crushed peanuts.
