Weave bacon strips in an over-under mesh and use for:

* burger buns: serve up the burger between two bacon weaves.

* quesadillas: For the bacon weave tortillas I started off by cooking two large bacon weave squares and then placing a bowl over each one and tracing around it with a knife to create a circle. The trick with these bacon weaves is to cook them to the point where the bacon sticks together and is able to be cut, but you don’t want to cook it too much or when you add your quesadilla ingredients and finish cooking it your bacon will burn. The cooking time will vary depending on which type of bacon you use and how thick it is, but for my original two bacon weaves I just cooked them in the oven at 400° for about 15 minutes. Then, after cutting them into circles, I added some chicken and cheese to them and fried my Bacon Weave Quesadilla in a pan on my stove for about five minutes. Completing my meal was a bowl of fresh homemade guacamole.

* pizza: I started off by weaving my bacon together and cooking it in the oven at 400°. After ten minutes I took it out and topped it with pizza sauce, mozzarella cheese, green onions, Italian sausage and pepperoni before putting it back in the oven for another ten minutes to complete the cooking process.

* grilled cheese: Instead of one bacon weave I made two this time, each of which was roughly the size of a piece of bread. Instead of putting them in the oven like I did with the bacon weave pizza though I decided to cook my bacon in the microwave this time. I don’t necessarily prefer one cooking method over the other, I was just really, really hungry and didn’t feel like waiting for my oven to preheat. Once they were done I threw them into a pan on my stove with a couple slices of cheese between them and waited until it melted into gooey perfection. The trick with a bacon weave grilled cheese is that you want the bacon crispy enough to eat prior to adding the cheese, but not too crispy to the point that the extra few minutes on the stove will burn it. I cooked my two bacon weaves in the microwave for five minutes each and they turned out perfect, but it will obviously differ based on the type of bacon you use so your best bet if you want to make your own is to check on it after three minutes and then cook it in 30 second increments after that until it’s done.

* burrito: After creating my bacon weave I cooked it in my oven for ten minutes at 375º just to get it to the point where the bacon was sort of starting to stick together. Then I took it out, drained the grease and topped the bacon weave with a pile of scrambled eggs, cheese, hash browns, chopped up breakfast sausages and diced red and green bell peppers. After that I folded it into a burrito, wrapped it up in aluminum foil and put it back in the oven for another 25 minutes. Once my bacon weave breakfast burrito was done cooking I unwrapped it from the aluminum foil, let it cool for a few minutes, took a couple pictures and then picked it up to take a bite. I realized pretty quickly though that removing the aluminum foil in the first place was a pretty bad call and that after one bite it would probably completely fall apart, so I wrapped it back up, cut it in half and started eating it the same way you would with any other giant burrito.

* taco/breakfast taco: For my bacon taco shell I started off the same way I did when I made my Bacon Weave Quesdailla, by creating a square bacon weave, cooking it in my oven at 400° for about 15 minutes and then placing an upside down bowl over it and tracing around it with a knife until I was left with a circular bacon weave. After that I hung it over a couple kabob sticks that were balanced across pint glasses and left it like that for a few minutes so it would keep its shape. Then I put the whole thing on a baking sheet and slid it back into my oven for another ten minutes so it could finish cooking.
