Ritter Family Stuffing

This is a customizable savory bread pudding, rather than an interior-of-the-bird stuffing. Vegetarian by default. Freezeable.

Method

  1. Chop the bread into 1/2-1“ cubes. Toast until crisp – an oven is a good idea.
  2. Finely dice the celery and onions. Grate or dice the carrots. Saute all the veggies and fungus.
  3. Beat the eggs.
  4. Combine all ingredients, Stir thoroughly. At this stage it is a sodden mass.
  5. Bake at 350F for about 30-45 minutes. The top should be crisp, the insides fully congealed, and a knife to the heart should come back clean.
