makes 3 cups

  1. Heat 4 TBS sugar with 2 tsp water over high heat until boiling. Cook without stirring until it caramelizes, 3-4 minutes. Add remaining water, sugar, and salt; stir to dissolve. Cool.
  2. Add vinegar and garlic. (note no mushroom soy - see alternate version)

Alternate method:

  1. boil water, sugar, and salt until dissolved. Cool. Add all remaining ingredients.
