makes 3 cups
11 TBS sugar
3 cups water
7 tsp salt
5 TBS vinegar
3 tsp garlic, minced
4 tsp mushroom soy
Heat 4 TBS sugar with 2 tsp water over high heat until boiling. Cook without stirring until it caramelizes, 3-4 minutes. Add remaining water, sugar, and salt; stir to dissolve. Cool.
Add vinegar and garlic. (note no mushroom soy - see alternate version)
Alternate method:
boil water, sugar, and salt until dissolved. Cool. Add all remaining ingredients.
