1 ripe mango diced
1 cup of frozen corn
1 medium tomato diced
1 cup black beans (can or cooked)
zest and juice of 1 lime and 1 orange
2 tablespoons olive oil
2 cloves garlic minced
4 green onions sliced - white only (or 1 small red onion diced)
1 green pepper diced
1 teaspoon cumin
1 1/2 teaspoon salt
1 tablespoon Mrs Dash Fiesta Lime (my 1 cheat for this recipe! If you like spicy foods add 1/2 teaspoon cayenne).
Mix all together and refridgerate for at least 2 hours to let the flavors mix. Mix and taste prior to serving and adjust seasonings as needed. I serve it cold with warm rice or as a side to grilled chicken or sword fish.
