1 can beans (black, kidney, cannelini, whatever) drained and rinsed
1/2 lb corn kernels, defrosted if frozen
1/2 medium onion, diced
olive oil
cider vinegar
sugar
salt and pepper
cilantro and parsley
Technique
Mix the veggies in a bowl. Mix the dressing in a bowl or measuring cup, correct the balance, and pour over the veggies. Can be served immediately, or refrigerate for a day to meld the flavors.
