Ingredients:

- 1 pita cut into 1/2“ squares - 2 English cukes, diced - 3 medium tomatoes, diced - 4 radishes, finely chopped - 8 scallions, finely chopped - 3/4 cup finely chopped mint - 5 cups finely chopped Italian parsley - 1/4 cup lemon juice - 1/2 cup olive oil - 3 tbsps sumac - 2 heads lettuce, such as Boston

Method:

1. Toast bread.

2. Whisk lemon juice, oil, sumac, salt, pepper in a bowl

3. Arrange lettuce leaves on platter.

4. Mix all other ingredients, heap on lettuce, sprinkle dressing.
