1. Gently bash the cucumbers with a rolling pin until they break up into large pieces. Chop these up into bite-sized pieces then roughly chop up the spring onions.
  2. Chop up the halloumi into small slices and pan-fry them with a glug of olive oil for 2 mins on either side until golden brown and crispy.
  3. In a large bowl, add in your tahini and 3 tbsp of boiling water. Whisk well until smooth then add in the soy sauce and crispy chilli oil.
  4. Add the cucumbers, halloumi and spring onions to the dressing. Toss well and serve up in bowls with some more chilli oil and enjoy!
