Sauce: whisk together sweet, sour, fish and soy.
Noodles: rinse and drain; shirataki noodles don't need to cook
Tofu: in a hot oiled pan, crisp slices of drained tofu until nearly crunchy
Chicken: stir-fry small cubes of chicken in very hot oil, along with the ginger, garlic and roughly chopped onion and scallion whites.
Eggs: scramble in the pan, not too hard.
Assemble: noodles, sprouts, tofu, chicken, eggs, sauce, finely sliced scallion greens, crushed peanuts.
