1. Heat the soy creamer in a pot over medium heat. When it approaches boiling, lower to a simmer and whisk in all of the ingredients except the arrowroot powder and the water.
  2. Whisk the arrowroot powder and water together in a small bowl and add to the pot. (If you want thinner nog, reduce to 1 TBS arrowroot powder to 2 TBS water.)
  3. Whisk until the liquid thickens, about 5 minutes. Pour into glasses and serve with a sprinkle of cinnamon on top.
