Technique

  1. Cook the rice with water, lemon rind, and cinnamon stick until soft. Remove the lemon rind and cinnamon stick and drain off any excess water. (Most of the water should have been absorbed into the rice.)
  2. Add milk, salt, vanilla extract, and sugar to the rice and cook over low heat, uncovered, stirring occasionally until thick - about 45-60 minutes. As it thickens, stir more frequently to prevent burning.
  3. Sprinkle with cinnamon and serve.
