* chopped carrot * chopped celery * chopped onion * diced potatoes * 1 tablespoon oil * 4 cups beef broth * 4 cups water * 2 cups chopped cooked roast beef OR 1.5 lbs stew beef cut into small cubes * 1 cup pearl barley * salt & pepper to taste * 1/2 cup chopped fresh Italian parsley * garlic powder * 1 teaspoon dried thyme - Brown the beef in the oil, and season with salt, pepper, & garlic powder. Put beef into the crockpot and brown the onions in the beef pan. Deglaze the pan with beef broth. - Put everything into the crockpot.
