Hard-boil eggs. Mash egg yolks. Mix egg yolks with salt, pepper, mayo, mango chutney. I use enough mayo to bind mashed egg yolks together, then mango chutney for the rest. Adjust amounts for taste and consistency. Mango chutney with ginger works well for an extra bite. I sometimes add other random spices. It's best to chop up the larger pieces of mango. A friend likes to use mango chutney from Trader Joe's. (Might be their brand, but I'd have to check.)
