makes 3 cups * 11 TBS sugar * 3 cups water * 7 tsp salt * 5 TBS vinegar * 3 tsp garlic, minced * 4 tsp mushroom soy - Heat 4 TBS sugar with 2 tsp water over high heat until boiling. Cook without stirring until it caramelizes, 3-4 minutes. Add remaining water, sugar, and salt; stir to dissolve. Cool. - Add vinegar and garlic.
